Walk into any delicatessen in Europe and you will find it: a small jar, a high price, and a label that says fermented black garlic. Read the menu of the restaurant next door and you will find the same two words. Read the press release of the producer who made it, and — more often than not — you will find them again.
They are the wrong words. Not slightly wrong, not a matter of taste: wrong in the way that calling a fish a mammal is wrong.
This is not pedantry for its own sake. The word tells you what to expect on the spoon, and a wrong word sends your palate looking for the wrong thing.
What fermentation is
Fermentation is a biological process. Something alive does the work: yeasts, lactic bacteria, moulds. They consume sugars, they produce acids and alcohols and gases, and the food changes because of what those organisms leave behind. Wine, bread, cheese, sauerkraut, miso — all fermented, all with a living agent at the centre of the story.
Black garlic has no living agent. It is made by placing whole bulbs in a controlled chamber, holding them at roughly 60 to 70 degrees Celsius with high humidity, and waiting — for three, four, sometimes six weeks. Nothing is inoculated. Nothing multiplies. At those temperatures, sustained for that long, the chamber is a hostile place for microorganisms, not a nursery.
What actually happens
What happens is the Maillard reaction: the same non-enzymatic browning that darkens a roast, a crust of bread, a seared steak. Amino acids and reducing sugars — garlic is rich in both — recombine slowly under heat into hundreds of new compounds. Among them are the melanoidins, the large brown-black pigments that give black garlic its colour. Not caramel. Not mould. Not fermentation.
Normally the Maillard reaction is a matter of minutes at high heat. Here it is weeks at low heat, which is why the result tastes nothing like a roast: same chemistry, different tempo, entirely different outcome.
The detail that gives it away
There is a second change, and for a taster it is the decisive one.
Raw garlic is not pungent. This surprises people, but the intact clove is almost mute. Pungency appears only when the cell wall is broken and an enzyme — alliinase — meets its substrate and produces allicin in seconds. Cut, crush, chew: that is when garlic becomes garlic.
Alliinase is a protein, and proteins denature with heat. In a black garlic chamber it is destroyed in the first hours and never returns. From that moment the bulb cannot produce allicin, no matter what you do to it. You can crush a clove of black garlic to a paste and nothing sharp will happen.
This is why black garlic is sweet, dark, balsamic — tamarind, prune, liquorice, aged vinegar — and why it leaves no trail on the breath. It is also the clean proof that the process is thermal rather than microbial: enzyme destruction is exactly what heat does, and exactly what a fermentation at ambient temperature would not do.
To be precise
Fermented garlic does exist. Garlic in brine, lacto-fermented garlic, the honey-and-garlic preparations bubbling on a thousand kitchen counters — those are genuine fermentations, with live bacteria, low temperature, acidity, and a sour profile that has nothing to do with black garlic. They are a different product with a different name, and confusing the two flattens both.
Why the word matters at the table
If you approach black garlic expecting a fermented food, you look for acidity, for the lactic tang, for the funk. You will not find them, and you will conclude that the product is disappointing or that your palate is failing.
If you approach it as what it is — a very slow Maillard — you look for the sweetness, the depth, the roundness, the faint bitterness at the back that tells you the chamber ran a little long. You find them all, immediately.
One word, and a taster is either lost or oriented.
